The ancestral art of string hung smoked salmon
Specializing in smoked salmon, Atelier SÖ passionately and meticulously perpetuates ancestral expertise, where every step counts in bringing out the best in the raw ingredients.
Our production teams are true craftsmen of taste, having mastered the art of manual filleting, dry salting, meticulous curing and old-fashioned string smoking, a technique inherited from the greatest master smokers.
Hand-hung in our smokehouses, the salmon is delicately caressed by a fine, natural smoke from wood selected for its subtle fragrance.
